    Masgouf (Arabic: مسكوف ) is a traditional Iraqi dish, it is an open cut fish grilled and spiced with salt, pepper and tamarind. While keeping the skin on, it is then brushed with olive oil.

    Traditional garnishes for masgouf include chopped onions and tomatoes, as well as the clay-oven flatbreads common to Iraq and much of the Middle East.[1]

    After marinating the fish, it is then placed on wooden sticks and then barbecued on a large flame.[2] After the fish is well cooked and crispy, it is often sprinkled with the juice of a lemon, ready to be served. [3]

    Like many other Iraqi dishes it is usually served with rice, along with salad and pickles.

      ok! i'm hands up! that sounds like a great dish, using
      my fav ingredient olive oil. i will try it at home with local fish??. thanks for the recipe.
      Did iraqia traditionally get the fish from the rivers or from the port at basra?

      in the meantime, fish n chips with salt n vinegar will have to do.

    from the rivers for sure...but u can get it from shat al arab (port of basra) as well but it taste better from the rivers my opinion :)
