Rice Pie....(I don't really know what it's called!)

A German friend taught me to make this and I never knew the actual name of it, so the kids started calling it rice pie, because the taste of it reminds them of a peach pie, but it's main ingredient is rice.  You have to try it to really appreciate it!

 4 cups of milk
1 cup of uncooked rice
1/2 stick butter or margarine
1 large can (arounde 16-20 oz.) of peaches in heavy syrup
1 small can of mandarin oranges
1 cup sugar
2 tsp. vanilla extract
1 tbsp orange rind
1 tbsp lemon rind
4 eggs (separated)

1. In a large pot bring milk, butter and rice to a slow boil, stiring constantly. Once milk starts to boil, lower the temperature to a slow simmer and cover pot. Stir regularly (every 5 minutes or so) until all milk is absored.  Remove from heat and let cool.

2. Drain Peaches and store juice in a separate container in the refriegrator. Chop peaches coarsely.

3. Drain mandarin oranges (juice may be discarded)

4. Preheat oven to 350 degrees

5. In a medium bowl, combine 4 egg yolks, sugar, vanilla, lemon rind and orange rind.  Beat on high speed until yolks turn a very light yellow color....almost an off white color.

6. Stir egg yolk mixture into coolede rice. Add chopped peaches and mandarin oranges and combine well.  Set aside.

7. In a cold bowl, beat egg whites until they form stiff peaks.

8.  Fold Egg Whites into Rice mixture.

9.  Pour mixture into a 9x11 casserole dish  sprinkle top with ground cinnamon.

10.  Bake in oven at 350 for 35-45 minutes.  Center should no longer be liquidy when finished (top and sides will be golden brown, possibly slightly darker)

11. Serve hot with reserved peach juice drizzled on top.

My family LOVES this....it is also great when reheated in the oven.

Kia and RSD.... did you guys try this? I LOVE it and so do the girls! A lot of times, I'll make it in the morning and we'll eat on it all day long! Gee, now I want to make some today! :-)
