Tuna Sambousa

With Ramadan here, I have been cooking ALOT. I have been experimenting with many dishes that I have never tried before. I have made Sambousa (fried pastry with filling on the inside) before usually with beef, cheese, or spinich. This weekend I experimented with something new, fish. I went to a Somali deli about couple months ago and had the BEST sambousa I have ever tasted before It was filled with tuna, which innitially sounded very odd, but was super yummy!!!. So, I decided to give it a try. Just so you know....it turned out EXCELLENT and that was without me test tasting (I am fasting after all) :-) Anyhow enjoy!

1 large cans of tuna in water    
1/2-3/4  medium size onion, minced
4-5 clove garlic, minced
1/2 green peper, chopped
1 green cerrano peppers, diced
2-4 tbsp curry
1-2 tsp cumin
Seasoning salt to taste
Pepper to taste
1 package phyllo sheets
1/2 cup water
3 tbs olive oil or butter
3 cups vegtable oil



 

Directions:
1. In a large skillet saute onion, garlic, green peppers and hot peppers.

2. Drain water out of tuna and then add to saute mix. Cook on med-high. Add all spices (I was just estimating amount of spices - you may need to taste to get it right) Add water as needed to so it doesn't burn, but don't over wet it. Once cooked thoroughly set aside.


3. Unroll phyllo, and cover with a barely damp towel to keep it from drying out. Place 1 piece of phyllo on a surface, and brush lightly with butter or olive oil. Place a heaping tablespoon of tuna mixture at the edge of the strip. Fold as if folding a letter to be mailed. Then fold top corner of phyllo over tuna, creating a triangle. Continue to fold over the triangle, and brush with butter/olive oil to seal edge.

4. Using oil to taste, fry the triangular packages until crisp.

Delicious!

I love Sambousas!  I've never made them before...But I guess this will have to be the first time! LOL  I've been looking for a recipie forever!  In this recipie, can the tuna be subsituted for something else?  Or would I have to look up another recipie to use another meat?
